The Big Chill

Today is supposed to be our final day in the 90s for a little bit.  I’m looking forward to the much more comfortable 80s because I can turn off the air conditioning.

I am NOT a fan of AC.  Don’t get me wrong, I appreciate it’s purpose and I am grateful to have central air in my home, but I am not a fan of walking into a place from outside and actually getting chills and shivering from it.

I carry a sweatshirt in my van for trips to the grocery store.  Are they aware that it’s unnecessary to make the entire building the same temperature as the refrigerated section?  Sometimes I wonder.

I am personally of the belief that it’s this going from very hot to very cold repeatedly that makes people susceptible to colds and flu in the middle of the summer.  How can your immune system function properly when you’re constantly trying to re-balance your body temperature?  That’s quite a strain.

We’ve spent this heatwave with our AC set on 76-78 degrees and we turn it off on our way to bed at night.  No, 78 degrees is NOT too hot.  Don’t believe me?  Go stand out in the sun on a 95 degree day (like we’ve had lately) for 15 minutes and water my garden.  Then come on in the house and tell me it’s not cool, comfortable, and perfect inside.  I turn it down to 76 during the part of the day when I’m cleaning.  Being up and moving around a lot creates heat, so I grab those extra two degrees to make cleaning up more tolerable.

Fans are a great alternative to AC, but there are a couple things to remember.

Running many fans can be just as much of an energy drain as running AC.  I did an experiment last summer and turned on every fan in the house.  Then I went out and recorded a video of the speed in which my electric meter was moving.  Then I went in, turned off ALL the fans, turned on the AC, and took another video.  I was shocked to see that when all the fans were on, the meter was actually spinning FASTER.  I was drawing LESS energy by just running the AC.

Also…

Fans cool people, not rooms!  If you sit in front of a fan, it blows air across your skin causing your sweat to evaporate creating a cooling effect.  If you run a fan in an empty room, you circulate warm air in circles.

SO!  Keep that AC temperature setting up.  You don’t really need to freeze.  You’ll feel better if you don’t.  You’ll be healthier if you don’t.  Plus, you get the added benefits of BEING Green by conserving energy and SAVING green by not pumping it into your electric bill.  And you can help your AC along by sitting near a fan, but if you’re not going to be in the room, fans are a waste of energy.

Make it a GREAT summer by staying healthy, saving money, and doing something caring for our Mother Earth.

Stand Out!

Over the last 2.5 years, I’ve changed the way my family eats.  I began to buy only whole grains and more fresh fruits and veggies.  I was changing my life and they were along for the ride.  All the changes being implemented were healthy, positive life changes, so no one was complaining.

One of the big changes is that I stopped buying processed snack foods so much.  Yes, you WILL find Ho-Hos in my cupboard once in a while, but you’re looking at maybe twice a year.

Does that mean we eat less sugar?  Heck yeah!
Does that mean we don’t eat snacks or that our snacks are less satisfying to the sweet tooth?  NOT A CHANCE!

By avoiding prepackaged snack foods, we cut out a TON of white sugar, white flour, preservatives, chemicals, & unpronounceable things from our lives.

Ive learned that, the trick to ditching all that garbage is to replace it.  That’s when I started stretching my baking muscle.

I’ve never been much of a baker and I never really liked it.  I love to cook.  Cooking is an impulsive thing, as am I.  Baking is much more precise.  One cup means exactly ONE CUP.  In cooking, one cup means, one cup… and a little more if you’re a fan of that flavor or a little less if you’re not… and a little more if you want a runnier consistency and a little less if you like it thicker…. I think my personality is more of a cook than a baker.  I’m not precise or exacting.  I like to wing it and go with the flow and see what happens.  This is NOT the way to bake! LOL That was a fast lesson learned.

Positive changes are best made in baby steps.  When we make too many changes at once, even when they’re positive in nature, we can burn out fast.  Making a change in your life is a marathon, not a sprint!  Small changes, one at a time, over a period of time so they have a better chance of becoming habits.  This is again where one month resolutions are very useful!

Here’s a great replacement for the prepackaged, processed, imitation food gunk they call snacks.  I made a batch for my family yesterday and they are fantastic! Enjoy!

El’s  “Yay Peanut Butter Cookies!”

Ingredients

  • 1/2 cup butter (I use a butter/olive oil mix)
  • 1 cup packed brown sugar
  • 1 cup peanut butter
  • 1 egg
  • 3 tablespoons milk (I used vanilla almond milk)
  • 1 tablespoon vanilla extract (Yes it’s a lot. We like vanilla. Feel free to use less.)
  • 1 3/4 cups whole wheat pastry flour (Or reg WW flour or put your WW flour in the food processor)
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt

Directions

  1. Preheat the oven to 350 degrees F (190 degrees C).
  2. In a medium bowl, cream together butter, brown sugar, and peanut butter until smooth. Stir in egg, milk, and vanilla. Combine flour, baking soda, and salt; stir into the peanut butter mixture until well blended. Drop by rounded spoonfuls onto ungreased cookie sheets.
  3. Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

~ Today, Thursday (3-25-10) @ 12:39am EST, the Moon v/c until 5:39am this morning ~

I spent the moon in Cancer focused on my home and my emotional connection to the Universe at large.  Wow!  I changed these three days.  My perspective on some things changed.  I’m just seeing things in a way that make my life a little bit easier and a little more enjoyable.  And I was already a considerably happy person :)  I WILL be posting about the experience in the near future.  Watch for *A House Full of Spirit*

Another great draw for me :)  I believe that this is a sign for me to know that I am on the right track.  I am really finding my place and my joy these days.  The past few months have been amazing for me, but I’ve really begun to find my focus over the past month and it feels wonderful.

I’m going to sit down here and type out my experience from the past couple of days in Cancer.  “The World” is encouraging me to do so, as is Leo.  My experience is all about who I am and my individuality in this sea of souls.  It’s all I really have to offer this world.  I do so in the hope that my contribution will make a difference for someone else.

You Say Potato, I Say Organic

Good Friday morning to all of you beautiful bloggies!
I feel so great about the next few days. As many of you know, Ash and I have decided to do a group abundance ritual/meditation tonight. You can find the details for it here.

At 5:55 EST this morning, the moon entered into the house of Taurus.

My almanac says:In Taurus, thing begun DO last, tend to increase in their value, and become hard to alter. Brings out an appreciation for beauty and sensory experience.

She’ll be in Taurus until She v/c @ 7:15 am on Sunday 02-21 until 1:47pm when She settles into Gemini.

I intend to attend my group ritual tonight and charge my money clip talisman and spend time meditating on the abundance all around. Thursday I ventured into the snowy wood to leave gifts of coins and beautiful stones for my Earthy Elementals. Saturday I will do it again. Taurus brings out an appreciation for beauty and there’s nothing I find more beautiful than the sanctity of nature.

I foresee a lazy Sunday morning. With the moon v/c, I like to take my cue to just chill! And what better time to chill with my family than on a lazy Sunday morning.

The moon will be headed straight into airy Gemini Sunday afternoon @ 1:47pm, but I’ll see you again before then. *wink*

You Say Potato, I Say Organic

I am sold.  I am all about the organic potato.  This wasn’t always the case however.

Why I didn’t want to try them.

I can buy a 10 pound bag of Idaho potatoes for $3 or I can buy a 3 pound bag of organic potatoes for $2.50.  Unfortunately math was my strong subject.

Why I decided to try them.

I stumbled upon a top 10 list of produce that retains the highest percentages of chemicals and are best bought organic. Potatoes were #1.  Coffee was #2, but with the amount of coffee I drink, I’d go broke!  One change at a time please.

Why I’m sold.

I bought the 3# of organic potatoes for $2.50.  *cringes* I took them home and the first thing I made with them was french fries.  I scrubbed them with my produce brush (LG fingernail brush), put them through the french fry cutter and dropped them into a bag with some olive oil and sea salt.  I shook them around to coat them and threw them into a 400 degree oven on parchment paper for about 15 minutes.

1* Normally I do up a bunch of potatoes and bake them.  We eat.  What’s left is left.  Usually the dogs get what’s left.  ~  How much money was I wasting by OVER cooking so often.  As I cut up the expensive organics, I was much more conscious to the amount that I would need and I even put out more vegetables to compensate for the smaller amount of potatoes.  Everyone ate everything.

2* These were, by far, the best tasting potatoes I’ve ever eaten.  I didn’t even realize that potatoes really HAD a flavor.  I always thought of them as bland and absorbing whatever flavor they’re added to, but that’s not true.  Potatoes are phenomenally delicious!

So that’s my testimonial for spending the extra money and buying the organic potatoes.  Give them a try, you won’t be sorry!
